What to do with all those PURPLE sweet potatoes
Make sweet potato salad with your purple sweet potatoes. These are firm enough to withstand boiling until tender and fantastic with your favorite potato salad recipe. Don't forget to save the potato water for soup or to water your plants with.
Here is my recipe which I use for many things but swap out "favorites".
Your favorite mayo, a dash of your favorite mustard, grated onion, celery seed if desired, salt and pepper to taste. I prefer this dressing on warm potatoes and served immediately.
