Unfortunately something tipped over a large tomato plant in a pot and lots of green tomatoes fell off. Not willing to toss them out, I made green tomato salsa.
Crock Pot Green Tomato Salsa
Chop onions, add to crock pot on high. Cook, stirring occasionally until tender.
Add diced green tomatoes and hot peppers to your tasting (seeds add a LOT of heat).
If you have them, and I did not, add some sweet bell peppers too.
Add lime juice, more vinegar than you think you should, salt, cumin, garlic, a bit of sugar, pepper, and moringa powder if you have it.
Mix well and cook until boiling.
Taste and adjust seasonings.
I put this in small freezer jars and froze most of it to use in future recipes.
