Recipe: Tomato Soup.
Saute a few diced onions in a lot of butter. I used 1/2 stick for about 8 servings. Two jars are missing from photo because we ATE them.
After onion is translucent, add a couple Tablespoons of flour to coat.
Add about three quarts of diced tomatoes. I did not remove the skin or seeds my tomatoes; I only cored them.
Add some chicken stock. I used a heaping Tablespoon of condensed organic stock from COSTCO.
Simmer until the tomatoes fall apart, about a half hour.
Remove from heat and pour in some condensed milk. I used about 3/4 of a can.
Taste then add salt, pepper, and perhaps a tad of sugar. Keep tasting until it is the way YOU like it.
