Of course the first head of cauliflower matures while we are away. It was exposed to the sun and did not blanch (whiten) on its own as professed by the seed packet. Oh, well. We ate it anyway. Make sure to harvest the tender stalk too! Just cut off the tough outer peel and chop up the center. No second harvest on a cauliflower so pull it out after harvesting. The stalk of this cauliflower had some brown spots inside so I just cut them out.
