Eating from the Garden: Jamaican Burr Cucumber Recipe



I just love this plant. Low maintenance. No insects. No disease. (As of yet, that is.)

Recipe
  1. Wash and brush off the prickly burrs with your hands or with a cloth.
  2. Slice, dice, or quarter these small cucumbers.
  3. Sprinkle with some salt and pepper. I prefer white pepper for looks.
  4. Add vinegar and water in a 1:1 proportion. This means if you add a quarter cup of water, add a quarter cup of vinegar.
  5. What vinegar you ask? Any. All. I've tried just about all of them but my favorite is Apple Cider Vinegar.
  6. You can serve immediately or if you like it tangier, marinate in the frig for a few hours
