- Wash and brush off the prickly burrs with your hands or with a cloth.
- Slice, dice, or quarter these small cucumbers.
- Sprinkle with some salt and pepper. I prefer white pepper for looks.
- Add vinegar and water in a 1:1 proportion. This means if you add a quarter cup of water, add a quarter cup of vinegar.
- What vinegar you ask? Any. All. I've tried just about all of them but my favorite is Apple Cider Vinegar.
- You can serve immediately or if you like it tangier, marinate in the frig for a few hours
