Refreshing on a hot day!
Take leftover, cooked carrots and add to blender. Cover with fat-free evaporated milk. Add a small amount of fresh or dried onion and condensed vegetable or chicken stock (for a richer flavor) then give it a whiz until smooth. If too thick, add water, milk, or more evaporated milk. Taste and add salt. Whiz again. This thickens more after standing.
GREAT leftover too. I just had this for breakfast!
If you are a moringa fan like us, add some dried moringa to the blender mix. If you don't overdo it, you won't even know it is there.
