Sauted Egyptian/Walking Onion and GREEN Seminole Pumpkin

 



 



So many pumpkins still growing from our planting in July that we need to use them green too!

Egyptian/walking onions are multiplying like crazy too. 

Saute onion in butter at medium heat. Butter really is the only way to make this dish. When onions are just about turning translucent, add pumpkin and stir well. Lower heat to medium low, cover and cook until tender (about 25 minutes). Salt and pepper it before serving.
