I now love allowing the papaya to just start to show signs of yellow to
use as a vegetable. It has a hint of sweetness that I am really growing
to love. And the color is fantastic. Use shredded papaya for just about
anything: slaws, salads, stir fries, soups... If you are going to use
green papaya as a potato substitute, give it plenty of cooking time to
get tender because it wants to be crunchy. I'm finding that shredding is
the way to go for a speedy meal.
