Recipes: sweet potatoes, sloppy joes, guacamole, spinach dip.



Roasted Sweet Potatoes
Peel ugly skinned potatoes and chop into 3/4 inch chunks. Place in a baking container. Toss with olive oil or grape seed oil to coat the potatoes and the container. Add black strap molasses and toss again. Black strap molasses are the byproduct of sugar making and professed to be much more healthy than refined sugar. Bake at 400ยบ until fork tender tossing occasionally. Top with shredded coconut and bake for another five minutes. John love this.




Home Made Sloppy Joes
Dice up the equivalent of a large onion and saute in your choice of oil until the onion is translucent. Add a pound of ground beef and saute until the ground been and bottom of the pan is browned. Add about a quart of chopped tomatoes. (I also threw in some salsa that needed to be finished up.) Cook until tender. Add a a squirt of your favorite mustard and your choice of relish. I use an entire container of Heinz dill relish. Serve over 100% whole wheat rolls. John eats his like a sandwich. I eat mine open faced with a fork. YUMMY.



Guacamole for one
John hates guacamole so I make it for myself and eat it with a spoon. Cut the avocado in half the long way. The seed is large and in the center so you won't be able to cut through the seed. Twist the two sides and one will come away with the seed and the other without. Carefully use your knife and gently whack the seed so that the knife blade is embedded in a small portion of the seed and twist to remove. Do this on a cutting board the first couple of times. I do it in my hand nowadays. To get the seed off the knife, I tap the knife handle on the metal part of my sink allowing the seed to fall into the sink.

Scoop out the flesh and mash with a fork. Sprinkle with salt and lime juice (in a pinch I use lemon). Raw onion does not like me so I add a dash or two, or three, of onion powder. You can use fresh diced onion though. Depending on your heat tolerance, add diced jalapeno to taste. I use my own jalapenos, seeds and all, that I grind and cover with apple cider vinegar then store in the refrigerator. If you are sensitive to the heat, use gloves and remove all seeds from the jalapenos before dicing or try this with sweet bell peppers. Mix well.

This is so much better if you can allow to "marinade" in the frig. I hardly ever though.
