Yakon: another new edible.
Yacón (Polymnia sonchifolia). A distant relative of the sunflower.
I purchased a tiny tuber on eBay a few years back but it never really did anything. When I found it at Top Tropicals in Buckingham, AND on sale, I could not resist trying it again. This will be pot grown since it is frost sensitive.
Quoting from other sites:
"Satisfyingly sweet cross between celery and Granny Smith apples — yacon is noted for its high fiber and low calorie content. "
"Plants can reach 5-7 feet tall, are quite attractive, and will flower only with a growing season of six months or more."
"One plant gave us a yield of 22 pounds of edible Yacón."
"Yacon recipes often contain citrus, because acidity prevents the discoloration that results once the pared tubers are exposed to air."
"Don’t expect to harvest an abundant crop of tubers the first year, because yacon needs time to adjust to local conditions. After that, yields are generally double to triple those of potatoes."
I will keep you posted!
