
Start with loquats. Halve. Remove seeds. Debutt them (remove the flower end with your fingernail works best for me).

Put them in a pot. Cover with water. Simmer until soft, mashing as you go.

Strain in sieve over a larger bowl. I pressed down the solids with the back of my "ladle".

Add sugar until the tang is evened out with sugar. This took 1 1/8 cups stevia to do this with our sour batch of loquats. Pour over lots of ice and serve. Yummy.
