Pickling Melon Salad Recipe
- Clean then thinly slice baby (8-10") pickling melon (they grow HUGE).
- Sprinkle salt and white pepper on them while prepping and adding the following:
- Sliced onion if desired (we do).
- Mix well 1/3 cup water, 1/3 cup apple cider vinegar, and 2 Tablespoons of Stevia (or sugar or honey).
- Pour over slices.
- Open a can of Fat Free Evaporated Milk.
- While stirring cucumbers slowly add 1/3 to 2/3 cup evaporated milk. I don't measure, I taste as I add.
- Adjust any of the ingredients being careful not to increase vinegar without increasing sweetener or it will CURDLE.
- We prefer this room temperature but if you can't eat it right away, refrigerate.
