Green Papaya Coleslaw
If you have a favorite coleslaw recipe, use it!
- Peel and rinse a green papaya.
- Cut in half and remove seeds if desired (I do).
- Grate papaya. I remove "pith" from center of fruit as I am grating.
- Add a dash or two of vinegar, your favorite mayonnaise, a tiny squirt of yellow mustard, a pinch of salt, a sprinkling of celery seeds, and onion (dried or raw).
- Mix well.
- TASTE and adjust to your liking!
- Top with a sprinkle of paprika for color.
- I added a sprig of Okinawa Spinach before serving.
