We
grow our carrots in THREE 3 x 8 foot beds. The seeds were sown using a
cottage cheese container with holes punched into the lid. Add
vermiculite to the seeds before "shaking" for even distribution and the
vermiculite helps keep the seeds moist. We do not cover our carrot seeds
with soil. Plant thick, keep constantly moist until they germinate,
then pull only the larger/thinned carrots and you will have carrots all
season long.
Yup. The thinnings are just as good, however a bit more work than mature carrots. These are going into a one-pot meal that includes triple-smoked sausage from Lancaster Pennsylvania, stored onions from earlier this year, a handful of green beans, some diced sweet peppers, and purple sweet potatoes tossed in olive oil. Heat on the stovetop until tender. We served with feta cheese on top.
